5 Healthy Foods You Should Cook with This Fall

1. Apples

Eat raw slices dipped into almond butter for an afternoon pick-me-up, or cut an apple into chunks and fold into your oatmeal with honey and cinnamon for a sweet breakfast treat.

2. Brussels Sprouts

Drizzle with 1 tbsp. of olive oil and season with salt, pepper, and garlic powder. Roast for 20 minutes at 400 degrees for a crispy, green alternative to French fries. 

3. Parsnips

Replace mashed potatoes with mashed parsnips this Thanksgiving! You'll cut your carbs, and still get a silky-smooth mash. 

4. Pumpkin

Pumpkin overnight oats will be your new favorite breakfast -- just combine 1/2 cup quick cooking oats, 1/2 cup unsweetened almond milk, 1/2 tsp. pumpkin pie spice, 1 tsp. pure maple syrup, and 2 tbsp. pumpkin puree into a mason jar and let sit overnight in the refrigerator. Cold oatmeal may sound a little weird, but it's actually really delicious when it's made like this.

5. Acorn Squash

Cut an acorn squash in half and place cut sides down on a cookie sheet. Bake 30 minutes at 350 degrees. Flip over and bake another 30 minutes. Stuff squash with cooked ground turkey, brown rice, sage, and dried cranberries. Looking for a sweet seasonal treat? Bake your squash, and stuff with yogurt, garnish with a few nuts, and sprinkle with cinnamon (trust me, the sweet and savory thing works here).
